Comfort Food (Print Version)

Ingredients:

01 - 1 pound lean ground beef.
02 - 4 to 6 medium Russet potatoes.
03 - 1 packet (1 ounce) taco seasoning.
04 - Shredded lettuce (for topping).
05 - Cheddar cheese (for topping).
06 - Sour cream (for topping).
07 - Salsa (for topping).
08 - Guacamole (for topping).
09 - Green onion (for garnish).

Instructions:

01 - Preheat your oven to 400°F (200°C). Clean and dry the potatoes, then prick each one with a fork. Wrap them in foil and place them in the oven to bake for about 60 minutes, or until they are tender.
02 - While the potatoes are baking, cook the ground beef in a skillet over medium-high heat until it is browned. Drain any excess fat.
03 - Add the taco seasoning to the beef, along with the amount of water recommended on the seasoning packet. Stir and bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
04 - Once the potatoes are done, carefully remove them from the oven and let them cool slightly. Unwrap the foil and cut a slit along the top of each potato.
05 - Fill the potatoes with the seasoned beef and top with your favorite taco toppings, such as shredded lettuce, cheddar cheese, sour cream, salsa, and guacamole.
06 - Garnish with chopped green onion and serve hot.

Notes:

01 - These taco potatoes can be customized with your favorite toppings. Add jalapeños for extra spice or black beans for additional texture.
02 - Serve with a side of tortilla chips or a simple salad to complete the meal.
