Summer Garden (Print Version)

Ingredients:

01 - 4 pints cherry tomatoes, halved.
02 - Extra virgin olive oil, as needed.
03 - 6 cloves garlic, minced.
04 - 18 large basil leaves, julienned, plus more for serving.
05 - 1/2 teaspoon crushed red pepper flakes.
06 - Kosher salt, to taste.
07 - 1/2 teaspoon freshly ground black pepper.
08 - 1 lb angel hair pasta.
09 - 1 1/2 cups freshly grated Parmesan cheese, plus more for serving.

Instructions:

01 - In a large mixing bowl, combine the halved cherry tomatoes, 1/2 cup of extra virgin olive oil, minced garlic, julienned basil, crushed red pepper flakes, 1 teaspoon of kosher salt, and freshly ground black pepper. Mix well, then cover and let sit at room temperature for 4 hours. This allows the flavors to meld beautifully.
02 - When ready to serve, bring a large pot of salted water to a boil. Add a splash of olive oil to the water, then cook the angel hair pasta according to the package directions until al dente.
03 - Drain the pasta thoroughly and add it to the bowl with the marinated cherry tomatoes. Sprinkle in the freshly grated Parmesan cheese and add a few more fresh basil leaves. Toss everything together until well combined.
04 - Serve the pasta immediately, topped with additional Parmesan cheese and fresh basil for garnish. Enjoy this light and flavorful summer dish!.
