Fried Potatoes (Print Version)

Ingredients:

01 - ½ cup bacon grease.
02 - 2 pounds russet potatoes, peeled and small diced.
03 - 1 small sweet onion, small diced.
04 - ½ teaspoon black pepper.
05 - ½ teaspoon creole seasoning.
06 - ½ teaspoon kosher salt.

Instructions:

01 - In a 10-inch or larger cast iron skillet, melt the bacon grease over medium heat.
02 - Add the potatoes, onion, pepper, creole seasoning, and salt.
03 - Toss so everything is coated in the bacon grease and well seasoned.
04 - Press into a single layer, cover, and cook for 7-10 minutes until the bottom browns.
05 - Flip the potatoes, making sure to scrape the bottom of the pan to release the crusty potatoes.
06 - Continue to cook for 10-15 minutes, flipping occasionally until nicely browned and the potatoes are tender.
07 - Taste and adjust seasoning if necessary.
