Smoked Cajun Burgers (Print Version)

Ingredients:

01 - 1/2 cup mayo.
02 - 1 tablespoon Worcestershire Sauce.
03 - 1/2 lemon, juiced.
04 - 1 teaspoon black pepper.
05 - 1 teaspoon garlic powder.
06 - 1 teaspoon smoked paprika.
07 - 1 teaspoon Tony’s Lite Creole Seasoning.
08 - 1 tablespoon garlic powder.
09 - 1 tablespoon onion powder.
10 - 2 teaspoons smoked paprika.
11 - 2 teaspoons black pepper.
12 - 2 teaspoons Tony’s Lite Creole Seasoning.
13 - 3 pounds ground chuck.
14 - 10 ounces pepper jack cheese, cubed (1/4” cubes).
15 - 1 bottle Tony’s Creole Style Burger Marinade.
16 - 2 sweet onions, chopped.
17 - 2 tablespoons unsalted butter.
18 - 1 tablespoon salt.
19 - Toasted buns.
20 - Colby Jack 3 Pepper Cheese.

Instructions:

01 - In a bowl, mix together 1/2 cup mayo, 1 tablespoon Worcestershire sauce, 1/2 lemon juice, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, and 1 teaspoon Tony’s Lite Creole Seasoning. Refrigerate until ready to use.
02 - In a bowl, combine 1 tablespoon garlic powder, 1 tablespoon onion powder, 2 teaspoons smoked paprika, 2 teaspoons black pepper, and 2 teaspoons Tony’s Lite Creole Seasoning.
03 - In a large bowl, mix 3 pounds ground chuck, 10 ounces cubed pepper jack cheese, and 1 bottle of Tony’s Creole Style Burger Marinade. Form into 1/3-1/2 pound balls and press into patties about 1/2 inch thick. Place on parchment paper and freeze for 20 minutes.
04 - In a skillet, melt 2 tablespoons unsalted butter over medium heat. Add 2 chopped sweet onions and 1 tablespoon salt. Cook for 30-40 minutes until caramelized.
05 - Preheat smoker to 250-275°F using hickory wood chunks. Place patties on the smoker and cook for 30-40 minutes. Add Colby Jack 3 Pepper Cheese to each patty to melt. Cook until the internal temperature reaches 165°F, then remove and let rest for 6 minutes.
06 - Serve the smoked burgers on toasted buns with Cajun sauce, caramelized onions, and additional cheese if desired.
