Pineapple Pork Loin (Print Version)
Ingredients:

2-3 lb pork loin (trimmed of excess fat).

2 tablespoons vegetable oil.

Salt and pepper.

8 cloves garlic (minced).
05 -
1/4 cup soy sauce.

1/2 cup brown sugar.

1 (23.5 ounces) can pineapple chunks with juice.
Instructions:

Trim the pork loin of excess fat and season with salt and pepper. Set aside.

Heat a large pan over medium-high heat. Add the vegetable oil. Once hot, add the pork loin and brown on each side for about 2-4 minutes, or until golden.

Add the browned pork loin to the slow cooker. Rub the minced garlic over the pork.

Pour the soy sauce and pineapple chunks with juice over the pork in the slow cooker. Distribute the brown sugar evenly over the top of the pork.

Put the lid on the slow cooker and cook on low for 4-6 hours for a soft pork loin that can still be sliced. For extra soft pork suitable for shredding, cook on low for 8-10 hours. During cooking, occasionally lift the lid and ladle the juices over the pork to keep it moist.

If shredding the pork, after shredding, add it back to the slow cooker and cook on low for another hour.
