Pineapple Pork Loin (Print Version)

Ingredients:

01 - 2-3 lb pork loin (trimmed of excess fat).
02 - 2 tablespoons vegetable oil.
03 - Salt and pepper.
04 - 8 cloves garlic (minced).
05 - 1/4 cup soy sauce.
06 - 1/2 cup brown sugar.
07 - 1 (23.5 ounces) can pineapple chunks with juice.

Instructions:

01 - Trim the pork loin of excess fat and season with salt and pepper. Set aside.
02 - Heat a large pan over medium-high heat. Add the vegetable oil. Once hot, add the pork loin and brown on each side for about 2-4 minutes, or until golden.
03 - Add the browned pork loin to the slow cooker. Rub the minced garlic over the pork.
04 - Pour the soy sauce and pineapple chunks with juice over the pork in the slow cooker. Distribute the brown sugar evenly over the top of the pork.
05 - Put the lid on the slow cooker and cook on low for 4-6 hours for a soft pork loin that can still be sliced. For extra soft pork suitable for shredding, cook on low for 8-10 hours. During cooking, occasionally lift the lid and ladle the juices over the pork to keep it moist.
06 - If shredding the pork, after shredding, add it back to the slow cooker and cook on low for another hour.
