Comfort Food (Print Version)

Ingredients:

01 - 1 lb lean ground beef.
02 - 1 cup diced yellow onions.
03 - 12 oz canned corn, not drained.
04 - 1/2 cup water.
05 - 0.87 oz beef gravy mix.
06 - 1/2 tsp salt.
07 - 1/2 tsp pepper.
08 - 1/2 tbsp onion powder.
09 - 1/2 tbsp garlic powder.
10 - 1 1/2 cups water (for mashed potatoes).
11 - 2 tbsp margarine (for mashed potatoes).
12 - 4 oz instant mashed potato mix.
13 - 1/2 cup milk.
14 - 28 oz frozen tater tots.
15 - 2 cups shredded mozzarella and cheddar cheese blend.

Instructions:

01 - Preheat oven to 425°F.
02 - Cook the ground beef in a large saute pan over medium-high heat with a dab of margarine or butter. Crumble as it cooks.
03 - Add diced onions to the pan with the beef and cook until onions are translucent and beef is fully cooked.
04 - Add canned corn (with liquid), water, gravy mix, salt, pepper, onion powder, and garlic powder to the pan. Stir until the beef is coated in gravy.
05 - Transfer the beef mixture to a greased 9 x 13-inch baking dish and spread evenly.
06 - Prepare the mashed potatoes: Bring water and margarine to a boil, remove from heat, add potato mix and milk, stir until combined, then let sit for 1 minute. Stir until smooth and creamy.
07 - Spread mashed potatoes over the beef mixture in the baking dish.
08 - Top with a single layer of tater tots.
09 - Bake in preheated oven for 30 minutes.
10 - Remove from oven, sprinkle shredded cheese on top, and return to oven for 4-6 minutes until cheese is melted and slightly browned.
11 - Let sit for a few minutes before serving.
