Nostalgic Recipes (Print Version)

Ingredients:

01 - 1 Tbsp shortening.
02 - 1½ Tbsp cornmeal.
03 - 1 (0.25-oz) packet of yeast.
04 - 1⅔ cups water.
05 - 2½ cups all-purpose flour.
06 - ¾ cups instant non-fat dry milk powder.
07 - 2 Tbsp sugar.
08 - ¼ tsp salt.
09 - 1½ tsp oil.
10 - 1⅓ cups pizza sauce, or to taste.
11 - 2 cups shredded mozzarella cheese, or to taste.
12 - Pizza toppings of your choice.

Instructions:

01 - Preheat the oven to 475ºF (246ºC). Grease a half-sheet pan with shortening and dust it with cornmeal. Set it aside.
02 - In the bowl of an electric stand mixer, combine the yeast with warm water and let it sit for a few minutes to activate.
03 - Add the flour, instant non-fat dry milk powder, sugar, salt, and oil to the yeast mixture. Mix thoroughly with the whisk attachment for about 10 minutes until a smooth dough forms.
04 - Evenly distribute the dough onto the prepared pan, pressing it out to the edges. Let the dough rest for a few minutes to rise slightly.
05 - Pre-bake the crust in the preheated oven for 10 minutes.
06 - Remove the crust from the oven and spread your desired amount of pizza sauce over the top. Add your choice of toppings and then sprinkle with shredded mozzarella cheese.
07 - Return the pizza to the oven and bake until the cheese is bubbly and golden, about 8-12 minutes.
08 - Cut into pieces and enjoy the nostalgic flavor of homemade school cafeteria pizza.

Notes:

01 - For an extra crispy crust, consider brushing the edges with a little olive oil before the final bake.
02 - Serve with a side of marinara sauce for dipping, or a simple salad for a complete meal.
