Salmon With Mango Salsa (Print Version)

Ingredients:

01 - 2 tbsp soy sauce or coconut aminos.
02 - 1 tbsp maple syrup or brown sugar.
03 - 2 tbsp olive oil.
04 - 2 tbsp lime juice (about 1 lime).
05 - 2 cloves crushed garlic (or 1 tsp garlic powder).
06 - 1/2 tsp kosher salt.
07 - 2 tsp Tajin.
08 - 1 tsp paprika.
09 - 1 tsp chili powder.
10 - 4 salmon filets (4-6 oz each).
11 - 1 large ripe avocado, diced.
12 - 1 large mango, diced.
13 - 1/2 red bell pepper, diced small.
14 - 2 tbsp finely chopped cilantro.
15 - 1/2 jalapeño, seeded and minced.
16 - 1/4 cup finely diced red onion.
17 - 2 tbsp fresh lime juice (about 1 lime).
18 - 1/2 tsp kosher salt (plus more to taste).

Instructions:

01 - Mix together the soy sauce, maple syrup, olive oil, lime juice, garlic, salt, Tajin, paprika, and chili powder in a bowl.
02 - Evenly coat the salmon filets in the marinade and let them sit for no less than 15 minutes.
03 - Heat your oven to 375°F (190°C).
04 - Position the marinated salmon on a baking tray and bake for 12-15 minutes until fully cooked.
05 - Combine avocado, mango, red bell pepper, cilantro, jalapeño, red onion, lime juice, and salt in a separate bowl.
06 - Gently stir until all salsa ingredients are well mixed.
07 - Set the salmon on serving plates and generously top with the mango salsa. Serve right away.
