Salmon With Mango Salsa (Print Version)
Ingredients:

2 tbsp soy sauce or coconut aminos.

1 tbsp maple syrup or brown sugar.

2 tbsp olive oil.

2 tbsp lime juice (about 1 lime).

2 cloves crushed garlic (or 1 tsp garlic powder).

1/2 tsp kosher salt.

2 tsp Tajin.

1 tsp paprika.

1 tsp chili powder.

4 salmon filets (4-6 oz each).

1 large ripe avocado, diced.

1 large mango, diced.

1/2 red bell pepper, diced small.

2 tbsp finely chopped cilantro.

1/2 jalapeño, seeded and minced.

1/4 cup finely diced red onion.

2 tbsp fresh lime juice (about 1 lime).

1/2 tsp kosher salt (plus more to taste).
Instructions:

Mix together the soy sauce, maple syrup, olive oil, lime juice, garlic, salt, Tajin, paprika, and chili powder in a bowl.

Evenly coat the salmon filets in the marinade and let them sit for no less than 15 minutes.

Heat your oven to 375°F (190°C).

Position the marinated salmon on a baking tray and bake for 12-15 minutes until fully cooked.

Combine avocado, mango, red bell pepper, cilantro, jalapeño, red onion, lime juice, and salt in a separate bowl.

Gently stir until all salsa ingredients are well mixed.

Set the salmon on serving plates and generously top with the mango salsa. Serve right away.
