Salisbury Meatballs (Print Version)

Ingredients:

01 - 1 package (about 1 lb) frozen meatballs (beef, turkey, or vegetarian options).
02 - 1 packet brown gravy mix.
03 - 1 packet French onion soup mix.
04 - Water (according to the gravy mix instructions).
05 - 4 large potatoes, peeled and chopped.
06 - 1/2 cup butter.
07 - 1/2 cup milk.
08 - Salt and pepper to taste.
09 - 1 lb carrots, peeled and sliced.
10 - 2 tablespoons olive oil.
11 - 3 cloves garlic, minced.
12 - 1 teaspoon fresh thyme leaves.

Instructions:

01 - In a large skillet, cook the frozen meatballs according to package instructions until browned and cooked through.
02 - Mix the brown gravy mix and French onion soup mix with water as per the gravy mix instructions.
03 - Pour the gravy mixture over the cooked meatballs in the skillet. Simmer the meatballs in the sauce until the sauce thickens slightly and coats the meatballs evenly.
04 - While the meatballs are simmering, boil the chopped potatoes in a large pot of salted water until fork-tender.
05 - Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper to the potatoes. Mash the potatoes until smooth and creamy. Adjust consistency with more milk if needed. Keep warm.
06 - In another skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
07 - Add sliced carrots to the skillet along with fresh thyme leaves, salt, and pepper. Sauté the carrots, stirring occasionally, until they are tender and lightly caramelized. Remove from heat.
08 - Plate the Salisbury meatballs on a bed of mashed potatoes. Arrange the garlic thyme glazed carrots on the side of the plate. Garnish with extra fresh thyme leaves if desired.
