Pumpkin Quesadilla (Print Version)

Ingredients:

01 - 1 can (15 oz) pumpkin puree.
02 - 1 cup shredded cheddar cheese.
03 - 8 flour tortillas.
04 - 1/2 teaspoon ground cumin.
05 - 1/2 teaspoon garlic powder.
06 - Salt and pepper to taste.
07 - 1 tablespoon butter.

Instructions:

01 - In a bowl, mix pumpkin puree, cumin, garlic powder, salt, and pepper.
02 - Spread the pumpkin mixture on four tortillas. Sprinkle with shredded cheese and top with the remaining tortillas.
03 - Heat butter in a large skillet over medium heat.
04 - Cook the quesadillas one at a time until the cheese is melted and the tortillas are golden brown, about 2-3 minutes per side.
05 - Cut into wedges and serve warm.
