Pizza Quesadillas (Print Version)

Ingredients:

01 - 12 flour tortillas (fajita size).
02 - 3 cups shredded mozzarella cheese.
03 - 1 cup pepperoni slices.
04 - 3 cups pizza sauce (divided).
05 - Optional: parsley for serving.

Instructions:

01 - Preheat a skillet or griddle to medium-high heat.
02 - Spray the surface with cooking spray and place one tortilla on the heated surface.
03 - Top the tortilla with ¼ cup of shredded mozzarella cheese and allow it to melt.
04 - Once the cheese is melted, top with sliced pepperoni and ¼ cup of pizza sauce.
05 - Sprinkle another layer of cheese, then top with a second tortilla.
06 - Flip the quesadilla once the bottom layer is crispy and golden.
07 - Cook the opposite side until golden brown.
08 - Use a pizza slicer or knife to slice and serve. Serve with the remaining pizza sauce for dipping. Garnish with parsley if desired.
