Holiday Cookie Bars (Print Version)

Ingredients:

01 - 2 oz unsweetened chocolate, coarsely chopped.
02 - 2 cups all-purpose flour.
03 - 3 tsp baking powder.
04 - 1/2 tsp salt.
05 - 12 tbsp butter, at room temperature.
06 - 4 tbsp vegetable shortening.
07 - 1 1/3 cups packed brown sugar.
08 - 1/2 cup granulated sugar.
09 - 2 eggs, at room temperature.
10 - 2 tsp pure coffee extract.
11 - 1 cup white chocolate chips.
12 - 1 cup peppermint baking chips.
13 - 1/2 cup mini M&M Baking Bits.
14 - About 3/4 of a 14 oz can of sweetened condensed milk.
15 - 1 tsp Christmas-colored sprinkles.

Instructions:

01 - Line a 13x9 baking pan with parchment paper.
02 - In a mixing bowl, combine flour, baking powder, and salt.
03 - Melt the chocolate using a double boiler method or a heatproof bowl over a pan of simmering water.
04 - In a stand mixer, beat butter, shortening, and sugars on medium speed until blended.
05 - Add melted chocolate, eggs, and coffee extract, beating until smooth.
06 - Gradually beat in the flour mixture until just combined, then stir in the white chocolate chips.
07 - Press the dough into the prepared baking pan and bake at 350°F for 15-20 minutes, ensuring not to fully bake.
08 - Remove from oven; top with peppermint chips, M&M bits, sprinkles, and pour over the sweetened condensed milk.
09 - Add extra sprinkles if desired, then bake at 350°F for another 20-25 minutes or until bubbly.
10 - Cool completely before lifting out and cutting into squares.
