Pecan Pie Muffins (Print Version)

Ingredients:

01 - 1 cup packed light brown sugar.
02 - ½ cup all-purpose flour.
03 - 2 cups chopped pecans.
04 - 2/3 cup butter, softened.
05 - 2 eggs, beaten.

Instructions:

01 - Preheat oven to 350°F (175°C). Grease mini or regular muffin cups generously.
02 - In a medium bowl, stir together brown sugar, flour, and pecans.
03 - In a separate bowl, beat the butter and eggs together.
04 - Stir in dry ingredients just until combined.
05 - Spoon batter into muffin cups about 2/3 full.
06 - Bake for 12-13 minutes for mini muffins or 15-17 minutes for regular size muffins.
07 - Run a knife around the edge of each muffin and pop it out.
