Snacks (Print Version)
Ingredients:
01 -
1 cup creamy peanut butter (Do not use natural peanut butter, as it can affect the texture).
02 -
1/4 cup butter, softened (Ensure the butter is softened for smooth mixing).
03 -
1/2 teaspoon vanilla extract (Adds a rich flavor to the peanut butter mixture).
04 -
1 1/4 cups powdered sugar (Sweetens the mixture while keeping it light).
05 -
2 cups Rice Krispies (Adds crunch, can increase by 1/2 cup if desired).
06 -
10 ounces semi-sweet chocolate melting wafers (Melted for coating the peanut butter balls).
07 -
1 teaspoon coconut oil (Helps the chocolate melt smoothly).
08 -
Flake sea salt (For garnish, adds a touch of saltiness to balance the sweetness).
Instructions:
01 -
Line a baking sheet with parchment paper and set it aside.
02 -
In a medium bowl, use an electric mixer to blend the peanut butter, softened butter, and vanilla extract until smooth.
03 -
Gradually add powdered sugar and mix until well combined.
04 -
Fold in Rice Krispies until evenly incorporated. Add more Rice Krispies if you want extra crunch.
05 -
Use a small scoop or spoon to form the mixture into 1-inch balls, rolling them between your hands to make smooth balls.
06 -
Arrange the peanut butter balls on the prepared baking sheet and place them in the freezer for 15 minutes to firm up.
07 -
In a microwave-safe bowl or double boiler, melt the semi-sweet chocolate wafers with the coconut oil, stirring until completely melted and smooth.
08 -
Remove the peanut butter balls from the freezer. Using a fork, dip each ball into the melted chocolate, letting excess chocolate drip off before placing them back on the parchment paper.
09 -
Sprinkle a little sea salt on top of each chocolate-coated ball, then refrigerate for 10 minutes to set.
10 -
Optionally, drizzle leftover chocolate over the top of the balls and add more sea salt before serving.
Notes:
01 -
Freezing the balls helps them maintain their shape when dipping in chocolate.
02 -
Use a fork to dip the balls for even coverage and easier handling.
03 -
Store the balls in an airtight container in the fridge for up to 5 days.
