Peach Cobbler Rolls (Print Version)

Ingredients:

01 - 10 egg roll wrappers.
02 - 1 large can of peach slices, drained.
03 - ¼ cup water.
04 - ¼ cup granulated sugar.
05 - 1 tbsp cornstarch.
06 - 1 tsp vanilla extract.
07 - A splash of fresh lemon juice.
08 - 1 large egg, beaten (for sealing).
09 - 2 tbsp melted butter.
10 - ½ cup brown sugar.
11 - 1 tbsp + 1 tsp cinnamon, separated.

Instructions:

01 - Heat your oven to 400°F and line a baking tray with parchment.
02 - Chop peaches into small pieces. Over medium-high heat, dissolve cornstarch in water, add to peaches along with granulated sugar, cooking until thick. Mix in vanilla, a teaspoon of cinnamon, and lemon juice, then let the mixture cool.
03 - Place each wrapper flat, add peach mix at one end, fold edges, and roll. Use beaten egg to seal.
04 - Brush rolls with butter, then coat with a mix of brown sugar and remaining cinnamon.
05 - Place rolls on the tray, bake for 15-20 minutes till they turn golden and crispy.
