Mexican Rice Casserole (Print Version)
Ingredients:

1 Pound Ground Beef.

1 Small Onion, Diced.

Salt & Pepper, To Taste.

2 Tablespoons Taco Seasoning.

1 Teaspoon Garlic Powder.

1 Cup Long Grain White Rice.

1 1/2 Cups Beef Broth.

1 15 Ounce Can Corn, Drained.

8 Ounces Tomato Sauce.

1/2 Cup Salsa.

1 Cup Shredded Cheese.
Instructions:

In a large skillet over medium-high heat, cook the ground beef and diced onion together with salt and pepper to taste until the beef is no longer pink. If needed, drain any excess grease.

Return the pan to the stove and sprinkle the cooked beef with garlic powder and taco seasoning, stirring well to coat the meat evenly.

Stir in the uncooked rice, beef broth, drained corn, tomato sauce, and salsa, ensuring all ingredients are well combined.

Bring the mixture to a boil. Once boiling, cover the skillet, reduce the heat to low, and let it simmer for 18-20 minutes, or until the rice is tender and fully cooked.

Remove the lid, sprinkle the casserole with shredded cheese, and then cover the pan again for an additional 2-3 minutes, or until the cheese is melted and bubbly.
