4 cups water.

4 cups raisins.
03 -
1 cup light brown sugar.
04 -
5 tablespoons cornstarch.
05 -
1/2 teaspoon cinnamon.
06 -
1/2 teaspoon salt.
07 -
2 teaspoons lemon juice.
08 -
3 tablespoons butter (not margarine).
09 -
1 teaspoon vanilla extract.
10 -
2, 9-inch deep dish pie shells.
Instructions:
01 -
In a medium pot, combine the raisins and water, bring to a boil, and cook for 5 minutes.
02 -
In a separate bowl, blend the brown sugar, cornstarch, cinnamon, and salt together. Slowly stir this mixture into the hot raisins.

Cook and stir until the syrup thickens, which should happen quickly.
04 -
Remove from the heat and stir in the lemon juice, butter, and vanilla. Allow the filling to cool slightly.
05 -
Pour the raisin filling into one of the pie shells. Remove the pie crust from the other shell and place it on top, sealing the edges by pinching them together.
06 -
Use a knife to make a couple of slits in the top of the pie to release steam.
07 -
Bake in a 425°F (220°C) oven for 30-35 minutes, or until the crust is golden brown.
