Nacho Egg Rolls (Print Version)
Ingredients:

1 lb lean ground beef.

¼ cup red bell peppers, chopped.

¼ cup green bell peppers, chopped.

⅓ cup black olives, chopped.

⅓ cup red onions, finely chopped.

½ cup shredded cheddar cheese.

Cheese sauce (your preferred cheese sauce).

1 package egg roll wraps (6-7 wraps).

Canola oil (enough for frying).

Instructions:

In a large mixing bowl, add the ground beef and seasonings of your choice. Mix until fully combined.

In a large skillet, heat the seasoned ground beef over medium-high heat. Cook for about 7-8 minutes, stirring frequently until the meat is browned. Drain the excess grease.

Add the chopped green bell peppers and red onions to the skillet with the browned meat. Cook for an additional 2 minutes until the onions become translucent.

Remove the skillet from the heat and place the meat and vegetable mixture in the refrigerator for about 10 minutes to cool slightly.

Preheat a deep fryer or a deep pot of canola oil to 350°F (175°C).

Lay out an egg roll wrapper in a diamond shape, with one pointed edge facing you.

Add a scoop of the ground beef mixture to the center of the wrapper. Top with chopped red bell peppers, black olives, and a drizzle of cheese sauce. Sprinkle some shredded cheddar cheese on top.

Begin rolling the egg roll by folding the bottom point over the filling, then folding in the sides. Roll up the rest of the way, using a dab of water to seal the edges.

Repeat the process until all the egg rolls are assembled.

Fry the egg rolls in the hot oil for 2-3 minutes, or until they are golden brown and crispy.

Remove the egg rolls from the oil and drain on paper towels.
