Mushroom Grilled Cheese (Print Version)

Ingredients:

01 - 250g mushrooms, sliced.
02 - 1 tablespoon olive oil.
03 - 2 tablespoons butter.
04 - 2 garlic cloves, crushed.
05 - 1/2 teaspoon chili flakes (optional).
06 - 1 teaspoon dried oregano.
07 - 1 teaspoon lemon juice.
08 - 8 slices sourdough bread.
09 - 1 cup mozzarella cheese, grated.
10 - 1 cup sharp cheddar cheese, grated.
11 - Extra butter for grilling.
12 - Salt and pepper to taste.

Instructions:

01 - Heat oil in pan. Sauté mushrooms until golden. Add butter, garlic, chili, oregano. Season with lemon, salt, pepper. Set aside.
02 - Mix mozzarella and cheddar.
03 - Lay out 4 bread slices. Add cheese mixture. Top with mushrooms. Cover with remaining bread.
04 - Butter outside of sandwiches. Cook until golden brown. Flip and cook other side. Cheese should be fully melted.

Notes:

01 - Use any mushroom variety.
02 - Adjust garlic to taste.
03 - Can prep mushrooms ahead.
04 - Great with soup.
05 - Customize cheese blend.
06 - Best served hot.
