Mushroom Grilled Cheese (Print Version)
Ingredients:

250g mushrooms, sliced.

1 tablespoon olive oil.

2 tablespoons butter.
04 -
2 garlic cloves, crushed.
05 -
1/2 teaspoon chili flakes (optional).
06 -
1 teaspoon dried oregano.
07 -
1 teaspoon lemon juice.
08 -
8 slices sourdough bread.
09 -
1 cup mozzarella cheese, grated.
10 -
1 cup sharp cheddar cheese, grated.

Extra butter for grilling.

Salt and pepper to taste.
Instructions:

Heat oil in pan. Sauté mushrooms until golden. Add butter, garlic, chili, oregano. Season with lemon, salt, pepper. Set aside.

Mix mozzarella and cheddar.
03 -
Lay out 4 bread slices. Add cheese mixture. Top with mushrooms. Cover with remaining bread.

Butter outside of sandwiches. Cook until golden brown. Flip and cook other side. Cheese should be fully melted.

Adjust garlic to taste.
