Mini Meatloaf Muffins (Print Version)

Ingredients:

01 - 1 lb ground beef (or turkey).
02 - 1 onion, finely chopped.
03 - 2 cloves garlic, minced.
04 - 1/2 cup bread crumbs.
05 - 1 egg, beaten.
06 - 2 tablespoons Worcestershire sauce.
07 - 1/4 cup ketchup.
08 - Salt and pepper to taste.
09 - 4 cups mashed potatoes (prepared as desired).
10 - 2 tablespoons butter.
11 - 1/4 cup milk.
12 - Grated cheese (optional).
13 - Chopped parsley (optional).
14 - Crispy bacon bits (optional).

Instructions:

01 - In a mixing bowl, combine the ground beef, finely chopped onion, minced garlic, bread crumbs, beaten egg, Worcestershire sauce, ketchup, salt, and pepper. Mix until well combined.
02 - Grease a muffin tin with cooking spray or line it with paper liners. Divide the meatloaf mixture evenly among the muffin cups, pressing it down gently to form mini meatloaf muffins.
03 - Preheat the oven to 375°F (190°C). Bake the mini meatloaf muffins for 20-25 minutes or until cooked through and golden brown on top.
04 - While the meatloaf muffins are baking, prepare mashed potatoes according to your favorite recipe. Once cooked, transfer the mashed potatoes to a piping bag fitted with a star tip for piping onto the muffins.
05 - Allow the mini meatloaf muffins to cool slightly before piping mashed potato frosting on top of each muffin. Swirl the mashed potatoes to resemble frosting on cupcakes.
06 - Garnish the mashed potato frosting with grated cheese, chopped parsley, or crispy bacon bits for extra flavor and visual appeal. Serve the mini meatloaf muffins warm and enjoy!.
