Mini Cheesecakes (Print Version)

Ingredients:

01 - 1 (12 ounce) package vanilla wafers.
02 - 2 (8 ounce) packages cream cheese.
03 - ¾ cup white sugar.
04 - 2 large eggs.
05 - 1 teaspoon vanilla extract.
06 - 1 (21 ounce) can cherry pie filling.

Instructions:

01 - Gather all ingredients.
02 - Preheat the oven to 350°F (175°C). Line two 24-cup miniature muffin tins with paper liners.
03 - Crush vanilla wafers. Press 1/2 teaspoon of crushed vanilla wafers into each paper cup.
04 - Beat cream cheese, sugar, eggs, and vanilla in a mixing bowl until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top.
05 - Bake in the preheated oven for 15 minutes until the cheesecake is set. Cool. Top with a teaspoonful of cherry pie filling.
06 - Serve and enjoy!.
