Broccoli Potato Soup (Print Version)

Ingredients:

01 - 2 cans (14.5 oz each) chicken broth.
02 - 2-3 large carrots, peeled and diced.
03 - 4 medium potatoes, peeled and cubed.
04 - 1 tsp onion powder.
05 - 2 small heads broccoli, washed and finely diced.
06 - 3 Tbsp butter.
07 - ⅓ cup flour.
08 - 3½ – 4 cups milk.
09 - 4 cups shredded cheddar cheese.
10 - 1 tsp salt.
11 - ½ tsp garlic pepper.
12 - 6 slices bacon, cooked and chopped.

Instructions:

01 - In a large pot, combine chicken broth, carrots, potatoes, and onion powder. Bring to a boil, cover, and simmer for about 10 minutes.
02 - Add broccoli, cover, and simmer for an additional 10 minutes.
03 - In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for about 1 minute until golden brown.
04 - Gradually whisk in milk and cook for about 5 minutes until the sauce thickens.
05 - Stir in shredded cheddar cheese until melted and smooth. Add salt and garlic pepper.
06 - Pour the cheese sauce into the large pot with the vegetables. Stir until well combined.
07 - Adjust the soup's consistency with additional milk if desired. Add salt and pepper to taste.
08 - Serve the soup topped with chopped bacon pieces. Enjoy it warm!.
