Ingredients:

2 pounds Jamaican sweet potatoes, peeled and grated.

1 cup coconut milk.

1/2 cup brown sugar.

1/2 cup granulated sugar.

1 teaspoon ground cinnamon.

1/2 teaspoon ground nutmeg.

1/2 teaspoon ground ginger.

1 teaspoon vanilla extract.

1/4 teaspoon salt.

1/4 cup raisins (optional).
Instructions:

Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish.

In a large bowl, combine grated sweet potatoes, coconut milk, brown sugar, granulated sugar, cinnamon, nutmeg, ginger, vanilla extract, and salt. Mix well.

If using, stir in the raisins until evenly distributed.

Pour the mixture into the prepared baking dish and smooth the top with a spatula. Bake in the preheated oven for 1 hour and 30 minutes, or until the pudding is set and golden brown on top.
