Dessert, Sweet Treat, Caribbean (Print Version)

Ingredients:

01 - 2 pounds Jamaican sweet potatoes, peeled and grated.
02 - 1 cup coconut milk.
03 - 1/2 cup brown sugar.
04 - 1/2 cup granulated sugar.
05 - 1 teaspoon ground cinnamon.
06 - 1/2 teaspoon ground nutmeg.
07 - 1/2 teaspoon ground ginger.
08 - 1 teaspoon vanilla extract.
09 - 1/4 teaspoon salt.
10 - 1/4 cup raisins (optional).

Instructions:

01 - Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish.
02 - In a large bowl, combine grated sweet potatoes, coconut milk, brown sugar, granulated sugar, cinnamon, nutmeg, ginger, vanilla extract, and salt. Mix well.
03 - If using, stir in the raisins until evenly distributed.
04 - Pour the mixture into the prepared baking dish and smooth the top with a spatula. Bake in the preheated oven for 1 hour and 30 minutes, or until the pudding is set and golden brown on top.
05 - Allow the pudding to cool slightly before slicing and serving.
