Instructions:

In a mixing bowl, combine the softened cream cheese, shredded cheddar, shredded mozzarella, diced jalapeños, crumbled bacon (if using), and fresh cilantro. Stir until evenly mixed.

Spread the cheese mixture evenly over one flour tortilla, leaving about 1/4 inch around the edges. Place a second tortilla on top to create a sandwich.

Heat a skillet over medium heat and add a little butter or oil. Place the quesadilla in the skillet and press down lightly. Cook for 3-4 minutes per side or until the tortilla is golden brown and crispy, and the cheese is fully melted.
