Jalapeño Popper Quesadillas (Print Version)

Ingredients:

01 - 2 large flour tortillas.
02 - 4 oz cream cheese, softened.
03 - 1/2 cup shredded cheddar cheese.
04 - 1/2 cup shredded mozzarella cheese.
05 - 2 jalapeños, seeded and diced.
06 - 4 slices cooked bacon, crumbled (optional).
07 - 2 tablespoons fresh cilantro, chopped (optional).
08 - Butter or oil for cooking.

Instructions:

01 - In a mixing bowl, combine the softened cream cheese, shredded cheddar, shredded mozzarella, diced jalapeños, crumbled bacon (if using), and fresh cilantro. Stir until evenly mixed.
02 - Spread the cheese mixture evenly over one flour tortilla, leaving about 1/4 inch around the edges. Place a second tortilla on top to create a sandwich.
03 - Heat a skillet over medium heat and add a little butter or oil. Place the quesadilla in the skillet and press down lightly. Cook for 3-4 minutes per side or until the tortilla is golden brown and crispy, and the cheese is fully melted.
04 - Once the quesadilla is golden and crisp, remove it from the skillet and let it rest for a minute before slicing into wedges. Repeat the process with the second quesadilla.
05 - Serve the quesadilla slices hot, with sides like sour cream, salsa, or guacamole for dipping.
