Spicy Hot Honey Crispy Chicken Sandwich (Print Version)

Ingredients:

01 - 4 chicken breasts, 5-6 oz each.
02 - Seasoned Flour (see below).
03 - Chicken Batter (see below).
04 - Vegetable or canola oil for frying.
05 - 3 cups all-purpose flour.
06 - 1 tsp ground black pepper.
07 - 2 tsp table salt.
08 - 1 tsp onion powder.
09 - ½ tsp cayenne pepper.
10 - 1 tsp paprika.
11 - 1 tsp garlic powder.
12 - 1 cup seasoned flour.
13 - 1 ½ cups cold water.
14 - ½ cup honey.
15 - ¼ cup hot sauce (e.g., Louisiana hot sauce).
16 - 2 Tbsp melted butter.
17 - Optional: jalapeños or other peppers for added heat.
18 - 4 sesame buns or brioche buns.
19 - Butter for buns.
20 - 4 slices of cheese (e.g., pepper jack, American singles).
21 - 20 slices of bread & butter pickles or other pickles.
22 - 2 cups shredded iceberg lettuce.
23 - 1 cup mayonnaise.
24 - 1 Tbsp sambal chili paste or other chili paste.

Instructions:

01 - Combine all ingredients for the seasoned flour and mix together well.
02 - Combine the seasoned flour and cold water. Whisk together until smooth.
03 - Whisk together the honey and hot sauce until combined. Slowly whisk in the warm butter. Optionally, add sliced jalapeños or other peppers to make a spicier version.
04 - Combine the mayonnaise and sambal chili paste. Mix together well.
05 - Remove excess fat and pound each chicken breast to about ¾ inch thick. Coat each chicken breast with the batter, place on a sheet pan, and refrigerate for 1 hour. After 1 hour, remove the chicken breasts from the refrigerator and coat each with the seasoned flour. Heat about 1 cup of vegetable or canola oil in a 12” skillet at medium-high heat for 3 minutes. Add the coated chicken breast to the pan and cook approximately 3 minutes on each side until golden brown. You might need to do this in batches. Remove the cooked chicken breasts and set them on paper towels to drain excess oil.
06 - Butter each bun and toast until lightly browned. For each sandwich, place a slice of cheese on the bottom bun, followed by shredded lettuce, 4-5 pickle slices, a cooked chicken breast, 2 Tbsp of Hot Honey Sauce, and finish with the top toasted bun spread with spicy mayo.

Notes:

01 - For an extra crispy coating, you can add vodka to the breading mixture.
02 - For a healthier option, you can air-fry the chicken.
