Hummingbird Bread (Print Version)

Ingredients:

01 - 1 ½ cups flour.
02 - 1 cup sugar.
03 - ½ cup mashed banana.
04 - 1 cup crushed pineapple.
05 - ½ cup chopped nuts.
06 - 1 teaspoon baking soda.
07 - ½ teaspoon salt.
08 - ½ teaspoon cinnamon.
09 - 2 eggs, beaten.
10 - ½ cup vegetable oil.
11 - Cream cheese for frosting.

Instructions:

01 - Preheat oven to 350°F.
02 - In a bowl, mix flour, sugar, baking soda, salt, and cinnamon.
03 - In another bowl, combine eggs, oil, mashed banana, and crushed pineapple.
04 - Pour wet ingredients into dry ingredients and mix until combined.
05 - Fold in chopped nuts.
06 - Pour batter into greased loaf pan.
07 - Bake for 60-70 minutes.
08 - Allow to cool before frosting with cream cheese.

Notes:

01 - This sweet and moist bread combines the tropical flavors of banana and pineapple with a rich cream cheese frosting. It's perfect for breakfast or as a dessert. The nuts add a nice crunch, but you can omit them if you prefer.
