Heavenly Moist Fruitcake (Print Version)

Ingredients:

01 - 1 cup unsalted butter, room temperature.
02 - 1 cup granulated sugar.
03 - 4 large eggs.
04 - 1 teaspoon vanilla extract.
05 - 2 cups all-purpose flour.
06 - 1 teaspoon baking powder.
07 - 1/2 teaspoon baking soda.
08 - 1/2 teaspoon salt.
09 - 1/2 teaspoon ground cinnamon.
10 - 1/4 teaspoon ground nutmeg.
11 - 1 cup mixed dried fruit (raisins, currants, chopped apricots, etc.).
12 - 1/2 cup chopped nuts (walnuts, pecans, etc.).
13 - 1/2 cup orange juice.

Instructions:

01 - Preheat oven to 325°F (165°C). Grease and flour a 9x5-inch pan.
02 - In a large bowl, combine butter and sugar until light and fluffy.
03 - Beat in eggs one at a time, then stir in vanilla.
04 - In a separate bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
05 - Gradually add dry ingredients to wet, mixing until combined.
06 - Fold in chopped dried fruit and nuts.
07 - Pour over mixture, gently stir until well incorporated.
08 - Pour into loaf pan, smooth top. Bake for 70-80 minutes. Cool in pan for 10 minutes, then on a wire rack.
