Heart-Shaped Strawberry Shortbread Cookies (Print Version)
Ingredients:

180 g flour.

1/4 teaspoon salt.

170 g strawberry jam.

30 ml milk.

125 g unsalted butter (room temperature).

60 g caster sugar.

1 teaspoon vanilla extract.

2 hulled and mashed strawberries.

Instructions:

In a large bowl, cream together 125 g room-temperature butter, 60 g caster sugar, and 1 teaspoon vanilla extract until light and fluffy.

In a separate bowl, sift together 180 g flour and 1/4 teaspoon salt. Gradually add the dry ingredients to the butter mixture and mix gently until a ragged dough forms.

With your hands, shape the dough into a disc and place it on a lightly floured surface. Roll the dough out to about 1/2 cm thickness.

Using a heart-shaped cookie cutter, cut out shapes from the dough and place them on a baking tray lined with parchment paper. Chill the cookies in the refrigerator for at least 30 minutes.

Preheat your oven to 170°C (335°F). Bake the cookies for 10-12 minutes or until golden at the edges. Let them cool on a wire rack.

In a small bowl, mix together 110 g icing sugar, 2 mashed strawberries, and 1 teaspoon melted butter until smooth.

Dip half of each cookie in the strawberry glaze and let it set. Spread a layer of strawberry jam on one cookie and sandwich it with another. Enjoy!.
