Hawaiian Banana Bread (Print Version)
Ingredients:

1/2 cup softened butter.

1 cup sugar.

1 mashed ripe banana.

1 cup crushed pineapple with juice.

Instructions:

Preheat your oven to 350°F (175°C). Grease a 9x5 loaf pan with butter or non-stick spray to prevent sticking.

In a large mixing bowl, use a mixer to blend 1/2 cup softened butter with 1 cup of sugar until the mixture is light and fluffy. Add 2 large eggs, one at a time, mixing well after each addition.

Fold in 1 mashed ripe banana and 1 cup of crushed pineapple (including the juice) until well combined.

In a separate bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.

Gently fold the dry mixture into the wet mixture, stirring until just combined.

Stir in 1/4 cup of shredded coconut for added texture and flavor.
