Hasselback Chicken (Print Version)

Ingredients:

01 - ¼ cup fresh spinach (50 g).
02 - ¼ cup ricotta cheese (50 g).
03 - 2 chicken breasts.
04 - ¼ cup cheddar cheese (20 g).
05 - 1 teaspoon paprika.
06 - Salt, to taste.
07 - Pepper, to taste.

Instructions:

01 - Cook the spinach on medium heat in a splash of oil for 3-5 minutes until slightly wilted. Stir in the ricotta and cook for an additional 30-60 seconds. Allow to cool.
02 - Cut slits into the chicken breasts about 1cm (½ inch) apart, ensuring not to cut all the way through (aim for about 75% of the way down). Stuff the slits with the spinach and ricotta mixture.
03 - Season the chicken breasts with salt and pepper. Grate the cheddar cheese and sprinkle it generously on top of the chicken. Sprinkle ground paprika over the chicken for added color and flavor.
04 - Preheat the oven to 400°F (200°C). Place the chicken in the center of the oven and bake for 20-25 minutes until the cheese has melted and the chicken juices run clear.
