Fried Cornbread (Print Version)

Ingredients:

01 - 2/3 cup cornmeal.
02 - 1/3 cup self-rising flour.
03 - 1/3 cup low-fat buttermilk.
04 - 1 large egg.
05 - Oil for frying (3 tbsp coconut oil or any oil of your choice).

Instructions:

01 - In a medium-sized bowl, combine the cornmeal, self-rising flour, low-fat buttermilk, and egg. Mix well until the batter is very moist but not too thin or soupy.
02 - Heat 3 tablespoons of oil (coconut oil or your preferred type of oil) in a skillet over medium heat.
03 - Using a spoon, drop spoonfuls of the batter into the hot oil, similar to how you would cook pancakes. Cook until golden brown on one side, then flip to cook the other side until browned.
04 - Remove the hoecakes from the skillet and place them on a plate lined with paper towels to blot any excess oil.
05 - Serve hot as a side dish or enjoy as a snack!.
