Fiesta Ranch Dip (Print Version)
Ingredients:

16 ounces sour cream.

2 tablespoons homemade ranch seasoning mix (see notes).

1 can (15 ounces) sweet corn, drained (see notes).

1 can (15 ounces) black beans, drained and rinsed (see notes).

1 can (10 ounces) Rotel, drained (see notes).

1 cup shredded sharp cheddar cheese.
07 -
ΒΌ cup cooked and finely crumbled bacon or bacon bits (optional).

Salt and pepper to taste.
Instructions:

In a large bowl, combine the sour cream, homemade ranch seasoning mix, sweet corn, black beans, Rotel, shredded cheddar cheese, and bacon (if using). Stir until well mixed.

Taste the dip and add salt and pepper as needed.

Cover the bowl and refrigerate the dip for at least 1-2 hours to allow the flavors to meld.
