Fiesta Ranch Dip (Print Version)

Ingredients:

01 - 16 ounces sour cream.
02 - 2 tablespoons homemade ranch seasoning mix (see notes).
03 - 1 can (15 ounces) sweet corn, drained (see notes).
04 - 1 can (15 ounces) black beans, drained and rinsed (see notes).
05 - 1 can (10 ounces) Rotel, drained (see notes).
06 - 1 cup shredded sharp cheddar cheese.
07 - ΒΌ cup cooked and finely crumbled bacon or bacon bits (optional).
08 - Salt and pepper to taste.

Instructions:

01 - In a large bowl, combine the sour cream, homemade ranch seasoning mix, sweet corn, black beans, Rotel, shredded cheddar cheese, and bacon (if using). Stir until well mixed.
02 - Taste the dip and add salt and pepper as needed.
03 - Cover the bowl and refrigerate the dip for at least 1-2 hours to allow the flavors to meld.
