Elegant Raspberry White Chocolate Swirl Cheesecake (Print Version)

Ingredients:

01 - 1/3 cup butter, melted.
02 - 1/4 cup sugar.
03 - 1 1/2 cups graham cracker crumbs.
04 - 3 packages (8 oz each) cream cheese, softened.
05 - 1 cup sugar.
06 - 1 teaspoon vanilla extract.
07 - 3 large eggs.
08 - 1/2 cup sour cream.
09 - 1/2 cup white chocolate chips, melted.
10 - 1/2 cup raspberry preserves.
11 - 1 cup white chocolate chips, melted (for top layer).
12 - Few drops of red food coloring (optional).
13 - Fresh raspberries and white chocolate curls for garnish.

Instructions:

01 - Preheat your oven to 325°F (160°C).
02 - In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the base of a 9-inch springform pan.
03 - In a large bowl, blend the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, mixing gently, and then fold in the sour cream.
04 - Pour half of the cream cheese mixture over the crust, drizzle half of the melted white chocolate and raspberry preserves, and swirl with a knife.
05 - Repeat with the remaining cream cheese mixture, white chocolate, and raspberry preserves. Add red food coloring if desired.
06 - Bake for 55-60 minutes, or until the center is set. Cool on a wire rack for 10 minutes before removing the springform rim.
07 - Once the cheesecake has cooled, pour the remaining 1 cup of melted white chocolate over the top for an even layer.
08 - Chill the cheesecake in the refrigerator for at least 4 hours. Garnish with fresh raspberries and white chocolate curls before serving.
