Dill Pickle Pasta Salad (Print Version)
Ingredients:

1 lb dry rotini pasta.

8 oz sharp white cheddar cheese, cubed.

2 cups diced dill pickles (plus extra for topping).

1 tbsp chopped fresh dill (plus extra for topping).

1 tbsp chopped fresh chives (plus extra for topping).

¾ cup mayonnaise.

½ cup sour cream.

⅔ cup pickle juice (from the pickle jar).

½ white onion, minced.

2 cloves garlic, minced.

½ tsp kosher salt.

¼ tsp ground black pepper.
Instructions:

Prepare the pasta according to package instructions until al dente. Drain and cool completely.

In a large bowl, mix the cooled pasta, cheese cubes, diced dill pickles, chopped dill, and chives.

In a separate bowl, whisk together mayonnaise, sour cream, pickle juice, minced onion, minced garlic, salt, and pepper until smooth.

Pour the dressing over the pasta mixture and toss until evenly coated.
