Dill Pickle Pasta Salad (Print Version)

Ingredients:

01 - 1 lb dry rotini pasta.
02 - 8 oz sharp white cheddar cheese, cubed.
03 - 2 cups diced dill pickles (plus extra for topping).
04 - 1 tbsp chopped fresh dill (plus extra for topping).
05 - 1 tbsp chopped fresh chives (plus extra for topping).
06 - ¾ cup mayonnaise.
07 - ½ cup sour cream.
08 - ⅔ cup pickle juice (from the pickle jar).
09 - ½ white onion, minced.
10 - 2 cloves garlic, minced.
11 - ½ tsp kosher salt.
12 - ¼ tsp ground black pepper.

Instructions:

01 - Prepare the pasta according to package instructions until al dente. Drain and cool completely.
02 - In a large bowl, mix the cooled pasta, cheese cubes, diced dill pickles, chopped dill, and chives.
03 - In a separate bowl, whisk together mayonnaise, sour cream, pickle juice, minced onion, minced garlic, salt, and pepper until smooth.
04 - Pour the dressing over the pasta mixture and toss until evenly coated.
05 - Chill the salad in the refrigerator for at least 1 hour to let the flavors blend.
06 - For an extra tangy flavor, toss the salad with an additional ¼-½ cup of pickle juice before serving. Garnish with extra diced pickles, fresh dill, and chives before serving.
