Ingredients:

01 - 3 boneless chicken breasts.
02 - 1 tablespoon minced garlic.
03 - 1 (28 oz) can crushed tomatoes.
04 - 1 (15 oz) can tomato sauce.
05 - 1 teaspoon salt.
06 - 1 teaspoon ground black pepper.
07 - 2 teaspoons Italian seasoning.
08 - 4 cups chicken broth.
09 - 1 cup freshly shaved parmesan cheese.
10 - 1 cup heavy whipping cream.
11 - 8 oz rotini pasta (uncooked).
12 - 1/2 cup bread crumbs.
13 - 1 tablespoon butter.
14 - 1 1/2 cups shredded mozzarella.

Instructions:

01 - Add the chicken breasts, minced garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth to the crock pot.
02 - Cover and cook on low for 6-8 hours or high for 3-4 hours.
03 - Shred the chicken, then stir in the parmesan cheese, heavy cream, and rotini pasta. Cover and cook on low for 30 minutes or high for 15 minutes.
04 - While the soup finishes cooking, sauté the bread crumbs in the butter in a pan on the stovetop.
05 - Top each serving of soup with shredded mozzarella and bread crumbs before serving.

Notes:

01 - Cooked in a crock pot for easy preparation and minimal active cooking time.
02 - Topped with breadcrumbs and mozzarella for a crispy, cheesy finish.
03 - Perfect for chilly days and makes enough to serve a family.
