Crispy Chicken Parmesan Rolls (Print Version)

Ingredients:

01 - 4 chicken breasts, thinly sliced.
02 - Salt to taste.
03 - Black pepper to taste.
04 - 1 cup all-purpose flour.
05 - 2 eggs, beaten.
06 - 2 cups panko breadcrumbs.
07 - 1/2 cup grated Parmesan cheese.
08 - 8 slices mozzarella cheese.
09 - 2 cups marinara sauce.
10 - Olive oil for frying.
11 - Fresh basil, chopped (for garnish).

Instructions:

01 - Season chicken slices with salt and pepper.
02 - Set up a dredging station with three shallow dishes: one for flour, one for beaten eggs, and one for a mixture of panko breadcrumbs and grated Parmesan cheese.
03 - Coat each chicken slice first in flour, then dip in egg, and finally coat thoroughly with the breadcrumb mixture.
04 - Place a slice of mozzarella on each breaded chicken piece. Roll tightly and secure with a toothpick if necessary.
05 - Heat olive oil in a skillet over medium heat. Fry each roll until golden brown all around and cooked through, about 4-5 minutes per side.
06 - Pour half of the marinara sauce into a baking dish. Place fried chicken rolls in the dish, cover with remaining sauce, and top with any leftover mozzarella slices.
07 - Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the cheese is bubbly and golden.
08 - Garnish with chopped fresh basil before serving. Serve hot with a side of pasta or a crisp salad.
