Hamburger Potato Soup (Print Version)

Ingredients:

01 - 1 1/2 lbs lean ground beef.
02 - 1 medium white onion, diced.
03 - 1 large garlic clove, minced.
04 - 6 cups chicken broth.
05 - 6 cups peeled and diced Russet potatoes.
06 - 2 cups frozen mixed vegetables of your choice.
07 - 3 tsp dried basil.
08 - 2 tsp dried parsley flakes.
09 - 1 1/2 cups milk.
10 - 2 tbsp cornstarch.
11 - 8 oz Velveeta cheese, cubed.

Instructions:

01 - In a large skillet, cook the ground beef, diced onions, and minced garlic over medium heat until the beef is fully browned and the onions are translucent. Drain any excess grease.
02 - Transfer the beef mixture to a crockpot or a large stockpot. Add the peeled and diced potatoes, chicken broth, frozen vegetables, dried basil, and dried parsley flakes. Stir to combine.
03 - For a crockpot, cook on low for 6-8 hours until the potatoes are tender. If using a stovetop, bring the mixture to a simmer and cook until the potatoes are tender.
04 - In a small bowl, whisk the cornstarch into the milk until smooth. Gradually add this mixture to the soup, stirring constantly to avoid lumps.
05 - Stir in the cubed Velveeta cheese, continuing to stir until the cheese is completely melted and the soup is creamy.
