Cracker Barrel Homemade Chicken & Dumplings (Print Version)

Ingredients:

01 - 1 large onion, chopped.
02 - 2 cloves garlic, minced.
03 - 3 carrots, sliced.
04 - 2 celery stalks, sliced.
05 - 1 whole chicken (about 1.5 kg), cut into pieces.
06 - 4 cups chicken broth.
07 - 1 teaspoon dried thyme.
08 - 1 teaspoon dried parsley.
09 - Salt and pepper to taste.
10 - 2 cups all-purpose flour.
11 - 1 tablespoon baking powder.
12 - 1/2 teaspoon salt.
13 - 1/2 cup milk.
14 - 1/4 cup melted butter.

Instructions:

01 - In a large pot, add the chicken pieces, onion, garlic, carrots, celery, chicken broth, thyme, parsley, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer for 30 minutes.
02 - Remove the chicken from the pot, shred it, and return it to the broth.
03 - In a bowl, combine the flour, baking powder, and salt. Stir in the milk and melted butter to form a dough.
04 - Drop spoonfuls of the dough into the simmering soup. Cover and cook for 15-20 minutes, or until the dumplings are puffed and cooked through.
05 - Adjust seasoning as needed before serving warm.
