Crab Biscuits (Print Version)

Ingredients:

01 - 1 package Cheddar Bay Biscuit Mix.
02 - 1 tsp garlic.
03 - 1 tsp Italian Seasoning.
04 - 1 pound lump crab meat, fully cooked.
05 - ¼ tsp paprika.
06 - ½ tsp onion powder.
07 - ½ cup + more mayonnaise, if needed.
08 - 1 tbsp mustard.
09 - ½ sleeve Ritz crackers, crushed.
10 - 1 cup grated parmesan.
11 - 1 tsp lemon juice.
12 - Melted butter for brushing.

Instructions:

01 - Prepare the Cheddar Bay Biscuit mix according to the package directions and set aside.
02 - Preheat the oven to 375°F (190°C) and spray two muffin tins with nonstick spray.
03 - In a large bowl, combine the crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Mix well, adding more mayonnaise if needed to hold the mixture together.
04 - Lightly dust your hands with flour and scoop a portion of the biscuit mix into your hand, forming a cup shape.
05 - Take a scoop of the crab mixture and place it into the biscuit cup.
06 - Cover the crab-filled biscuit with a little more biscuit dough to enclose the filling.
07 - Repeat with the remaining dough and crab mixture, placing each filled biscuit into the prepared muffin tins.
08 - Bake for 12 to 15 minutes, or until the biscuits are golden brown.
09 - While the biscuits are baking, mix melted butter with 1 tsp of lemon juice.
10 - Once baked, brush the biscuits with the lemon butter mixture and serve warm.
