Ingredients:
01 -
4 slices bacon, chopped.
02 -
2 (12-ounce) packages kielbasa sausage, cut into 1/2 inch slices.
03 -
1 1/2 pounds ground beef (80/20).
04 -
1 medium onion, diced.
05 -
3 cloves garlic, minced.
06 -
3 tablespoons all-purpose flour.
07 -
1 1/2 teaspoons salt.
08 -
1/2 teaspoon black pepper.
09 -
1 teaspoon chili powder.
10 -
1 (14.5-ounce) can petite diced tomatoes, with liquid.
11 -
2 (16-ounce) cans baked beans or ranch beans, with liquid.
12 -
1 (7-ounce) can chopped green chilies, with liquid.
13 -
1 (15-ounce) can sweet corn, with liquid.
14 -
2 medium russet potatoes, peeled and cut into 1/2 inch cubes.
15 -
1 cup water.
16 -
2 tablespoons parsley, chopped.
Instructions:
01 -
In a large pot, cook the chopped bacon over medium heat until brown and crispy. Using a slotted spoon, transfer the bacon to a plate lined with paper towels to drain.
02 -
Add the sliced sausage to the pot drippings and brown on both sides, adjusting the heat as necessary to prevent burning. Remove the sausage and add it to the plate with the bacon.
03 -
Add the ground beef, diced onion, and minced garlic to the pot. Cook until the beef is no longer pink.
04 -
Sprinkle flour, salt, black pepper, and chili powder over the beef mixture. Stir and cook for 1 minute to incorporate.
05 -
Add the diced tomatoes, baked beans, green chilies, sweet corn, potatoes, bacon, sausage, and water to the pot. Bring the stew to a boil, then reduce the heat and let it simmer, covered, for 1 hour, stirring occasionally.
06 -
Garnish with chopped parsley before serving.
07 -
If the stew is too thick, add additional water as needed.
