French Toast Muffins (Print Version)

Ingredients:

01 - 2 cups all-purpose flour.
02 - 1 cup granulated sugar.
03 - 1 tablespoon baking powder.
04 - 1/2 teaspoon salt.
05 - 1 teaspoon ground cinnamon.
06 - 1/2 cup milk.
07 - 1/4 cup butter, melted.
08 - 1/4 cup vegetable oil.
09 - 2 large eggs.
10 - 1 teaspoon vanilla extract.
11 - 1/4 cup granulated sugar.
12 - 1 teaspoon ground cinnamon.
13 - 1/4 cup butter, melted.

Instructions:

01 - Set your oven to 350°F (175°C). Prepare a muffin tin with paper liners or lightly grease the muffin cups.
02 - In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until evenly combined.
03 - In another bowl, whisk the milk, melted butter, vegetable oil, eggs, and vanilla extract together.
04 - Pour the wet mixture into the dry ingredients and stir until just combined. It’s okay if there are a few lumps.
05 - Evenly distribute the batter into the muffin cups, filling each about 3/4 full.
06 - Place the muffins in the oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the pan for a few minutes, then transfer them to a wire rack.
07 - While the muffins are cooling, mix the sugar and cinnamon in a small bowl. Melt the butter in another bowl.
08 - Dip the tops of the warm muffins into the melted butter, then into the cinnamon sugar mixture, ensuring they are well coated.
