Chicken Cordon Bleu Meatloaf (Print Version)

Ingredients:

01 - 2 teaspoons minced onion.
02 - 1 1/2 teaspoons garlic powder.
03 - 1/2 teaspoon dried parsley.
04 - 2 lbs. ground chicken.
05 - 1 egg.
06 - 1/4 cup plain bread crumbs.
07 - 1 1/2 teaspoons salt.
08 - 1/2 teaspoon ground black pepper.
09 - 1/4 cup mayonnaise.
10 - 6 slices Virginia chicken ham.
11 - 6 slices Swiss cheese.
12 - 3/4 cup panko breadcrumbs for topping.
13 - 1 cup skim or 1% milk.
14 - 3 tablespoons butter.
15 - 3 tablespoons flour.
16 - 1/4 cup heavy cream.
17 - 1 teaspoon Worcestershire sauce.
18 - 1 tablespoon Dijon mustard.
19 - 1/2 cup grated Parmesan cheese.
20 - 1/4 teaspoon freshly grated nutmeg.
21 - Salt and pepper to taste.

Instructions:

01 - Preheat oven to 400°F.
02 - Mix chicken with egg, mayonnaise, 1/4 cup breadcrumbs, onion, garlic powder, parsley, salt, and pepper.
03 - In a loaf pan, layer half the chicken mixture, followed by chicken ham and cheese. Repeat with remaining chicken mixture.
04 - Bake for 25 minutes, then add panko breadcrumbs, and bake for another 15 minutes.
05 - For the gravy, melt butter, whisk in flour, add cream, milk, Worcestershire sauce, and Dijon mustard. Simmer, then add Parmesan, nutmeg, salt, and pepper.
06 - Let the meatloaf rest, slice, and serve with gravy.

Notes:

01 - Layering the ham and cheese between the chicken mixture creates a delicious, melted center.
02 - Resting the meatloaf before slicing helps keep it together and makes it easier to serve.
