Chicken Casserole (Print Version)

Ingredients:

01 - 2 cups (chopped) store-bought rotisserie chicken (purchase family-sized chicken).
02 - 1 cup (cooked) long-grain white rice.
03 - 10.5 ounce can cream of celery soup.
04 - ¾ cup mayonnaise.
05 - ½ cup chicken stock (or broth).
06 - ½ cup finely diced onion.
07 - Salt, pepper, garlic powder, to taste.
08 - 1 ½ cups bread crumbs.
09 - 3 tablespoons salted butter, melted.

Instructions:

01 - Preheat oven to 350°F. Spray an 11x7-inch baking dish with nonstick cooking spray.
02 - In a large bowl, stir together chicken, cooked rice, cream of celery soup, mayonnaise, chicken stock, and finely diced onion. Optionally, season with salt, pepper, and garlic powder to taste.
03 - Spread the mixture into the prepared baking dish.
04 - In a small bowl, combine bread crumbs with melted butter.
05 - Sprinkle the bread crumb mixture evenly over the chicken mixture.
06 - Bake in the preheated oven for about 35-40 minutes until golden brown and bubbly. Sprinkle with parsley before serving.
