Chicken Casserole (Print Version)
Ingredients:

2 cups (chopped) store-bought rotisserie chicken (purchase family-sized chicken).

1 cup (cooked) long-grain white rice.

10.5 ounce can cream of celery soup.

¾ cup mayonnaise.

½ cup chicken stock (or broth).

½ cup finely diced onion.

Salt, pepper, garlic powder, to taste.

1 ½ cups bread crumbs.

3 tablespoons salted butter, melted.
Instructions:

Preheat oven to 350°F. Spray an 11x7-inch baking dish with nonstick cooking spray.

In a large bowl, stir together chicken, cooked rice, cream of celery soup, mayonnaise, chicken stock, and finely diced onion. Optionally, season with salt, pepper, and garlic powder to taste.

Spread the mixture into the prepared baking dish.

In a small bowl, combine bread crumbs with melted butter.

Sprinkle the bread crumb mixture evenly over the chicken mixture.

Bake in the preheated oven for about 35-40 minutes until golden brown and bubbly. Sprinkle with parsley before serving.
