Cheesy Fiesta Corn Casserole (Print Version)

Ingredients:

01 - 2 cups shredded cheddar cheese.
02 - 1 cup shredded Monterey Jack cheese.
03 - 2 tablespoons all-purpose flour.
04 - 1/2 teaspoon black pepper.
05 - 3/4 cup milk.
06 - 4 ounces cream cheese, softened.
07 - 2/3 cup sliced green onion, divided.
08 - 1 teaspoon hot sauce.
09 - 2 (15.25 oz.) cans whole kernel corn, well drained.
10 - 2 (15.25 oz.) cans whole kernel Mexicorn or Fiesta Corn with red & green peppers, drained.
11 - 1/2 to 1 tablespoon chopped pickled jalapeno (about 4 to 6 slices).
12 - Chopped fresh cilantro for garnish (optional).

Instructions:

01 - In a small bowl, toss together shredded cheddar cheese, shredded Monterey Jack cheese, flour, and black pepper. Set aside.
02 - In a 9x13-inch baking dish, mix together milk, softened cream cheese, 1/3 cup of the sliced green onions, hot sauce, and chopped jalapenos. Add the drained corn and the cheese mixture. Stir until all ingredients are well combined.
03 - Cover the baking dish with foil and bake in a preheated oven at 350°F for 30 minutes.
04 - Remove the foil, sprinkle with the remaining 1/3 cup of green onions, and bake for an additional 5 minutes.
05 - Sprinkle with chopped cilantro, if desired, just before serving.
