Cheesy Fiesta Corn Casserole (Print Version)
Ingredients:

2 cups shredded cheddar cheese.

1 cup shredded Monterey Jack cheese.

2 tablespoons all-purpose flour.

1/2 teaspoon black pepper.

3/4 cup milk.

4 ounces cream cheese, softened.

2/3 cup sliced green onion, divided.

1 teaspoon hot sauce.

2 (15.25 oz.) cans whole kernel corn, well drained.

2 (15.25 oz.) cans whole kernel Mexicorn or Fiesta Corn with red & green peppers, drained.

1/2 to 1 tablespoon chopped pickled jalapeno (about 4 to 6 slices).

Chopped fresh cilantro for garnish (optional).
Instructions:

In a small bowl, toss together shredded cheddar cheese, shredded Monterey Jack cheese, flour, and black pepper. Set aside.

In a 9x13-inch baking dish, mix together milk, softened cream cheese, 1/3 cup of the sliced green onions, hot sauce, and chopped jalapenos. Add the drained corn and the cheese mixture. Stir until all ingredients are well combined.

Cover the baking dish with foil and bake in a preheated oven at 350°F for 30 minutes.

Remove the foil, sprinkle with the remaining 1/3 cup of green onions, and bake for an additional 5 minutes.
