Comfort Food (Print Version)

Ingredients:

01 - 2 tsp. vegetable oil.
02 - 1 lb. lean ground beef.
03 - Salt and pepper to taste.
04 - 1 medium yellow onion, diced finely.
05 - 2 cloves garlic, minced.
06 - 4 cups chopped green cabbage.
07 - 2 medium carrots, quartered and sliced.
08 - 4 cups low-sodium beef broth.
09 - 3 (8 oz.) cans tomato sauce.
10 - 1/2 cup white rice, uncooked.
11 - 1 bay leaf.
12 - 3 tbsp. light brown sugar.
13 - 2 tbsp. fresh chopped parsley.

Instructions:

01 - In a Dutch oven or large soup pot, heat oil over medium-high heat and add ground beef.
02 - Season ground beef with salt and pepper and cook until browned.
03 - Add diced onion and minced garlic and cook for 2-3 minutes, until onions are tender.
04 - Add chopped cabbage, carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar, stirring to combine.
05 - Bring soup to a simmer and cook for 25 minutes, until rice is tender.
06 - Remove bay leaf and sprinkle with chopped parsley before serving.

Notes:

01 - This soup is hearty and perfect for cold weather.
02 - Feel free to add additional spices like thyme or paprika for extra flavor.
03 - You can substitute brown rice for white rice if desired.
