Butter-Pecan-Pound-Cake (Print Version)

Ingredients:

01 - Pecans: 2 cups.
02 - Butter: 3 sticks (24 tablespoons) unsalted, at room temperature.
03 - Brown Sugar: 1 cup, packed.
04 - Granulated Sugar: 2 cups.
05 - Eggs: 5 large, at room temperature.
06 - Flour: 3 cups cake flour.
07 - Baking Powder: 1/2 teaspoon.
08 - Salt: 1/4 teaspoon kosher salt.
09 - Vanilla Extract: 1 tablespoon.
10 - Cream Cheese: 4 ounces, softened.
11 - Butter: 3 tablespoons, softened (for frosting).
12 - Powdered Sugar: 2 cups.
13 - Vanilla Extract: 1/2 teaspoon (for frosting).
14 - Southern Butter Pecan Coffee Creamer (optional): 2-4 tablespoons.

Instructions:

01 - Preheat the oven to 325°F (165°C).
02 - Spray a 10-inch tube pan or Bundt pan with nonstick cooking spray and lightly coat with flour.
03 - Melt 2 tablespoons of butter over medium heat. Add 2 cups of pecans and toast for about 5 minutes, ensuring not to burn them. Remove from heat.
04 - Place the toasted pecans in a food processor and grind until fine. Set aside.
05 - Sift the cake flour, baking powder, and salt into a bowl. Set aside.
06 - Using a stand mixer, cream the butter and sugars (granulated and brown) for about 10 minutes, until fluffy.
07 - Add the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
08 - Add the vanilla extract and blend well.
09 - Alternate adding the flour mixture and the ground pecans, beginning and ending with the flour mixture.
10 - Pour the batter into the prepared tube or Bundt pan.
11 - Bake in the preheated oven for 75-90 minutes. Check for doneness at 75 minutes; the cake is done when an inserted toothpick comes out with just a few crumbs.
12 - In a medium bowl, mix together the softened cream cheese and butter until smooth. Add the powdered sugar 1 cup at a time and mix well. Add the vanilla extract and mix on low until fully incorporated. If desired, add the Southern Butter Pecan Coffee Creamer by the tablespoon until the frosting reaches the right pourable consistency.
13 - Once the cake has completely cooled, frost it with the cream cheese frosting.
14 - Garnish with chopped pecans around the edges of the cake, if desired.
