Braised Oxtails (Print Version)

Ingredients:

01 - 3 lbs oxtails, trimmed.
02 - Salt and black pepper to taste.
03 - 2 tablespoons vegetable oil.
04 - 1 large onion, chopped.
05 - 3 cloves garlic, minced.
06 - 1 tablespoon fresh ginger, minced.
07 - 1 cup beef broth.
08 - 1/2 cup grape juice.
09 - 2 tablespoons soy sauce.
10 - 2 tablespoons Worcestershire sauce.
11 - 2 bay leaves.
12 - 1 teaspoon dried thyme.
13 - 2 carrots, sliced.
14 - 2 stalks celery, sliced.

Instructions:

01 - Season the oxtails with salt and pepper. In a large pot, heat the vegetable oil over medium-high heat and brown the oxtails on all sides, about 10 minutes. Set them aside once done.
02 - In the same pot, add the chopped onion, minced garlic, and minced ginger. Cook until the onion is soft and translucent, about 5 minutes.
03 - Return the browned oxtails to the pot. Add beef broth, grape juice, soy sauce, Worcestershire sauce, bay leaves, and thyme. Bring the mixture to a gentle boil.
04 - Reduce the heat to a gentle simmer, cover the pot, and cook for 2 to 3 hours or until the oxtails are tender and falling off the bone.
05 - Add the sliced carrots and celery during the last 30 minutes of cooking.
06 - Remove the bay leaves before serving. Serve the oxtails with the vegetables and broth.
