Braised Oxtails (Print Version)
Ingredients:

3 lbs oxtails, trimmed.

Salt and black pepper to taste.

2 tablespoons vegetable oil.

1 large onion, chopped.

3 cloves garlic, minced.

1 tablespoon fresh ginger, minced.

1 cup beef broth.

1/2 cup grape juice.

2 tablespoons soy sauce.

2 tablespoons Worcestershire sauce.

2 bay leaves.

1 teaspoon dried thyme.

2 carrots, sliced.

2 stalks celery, sliced.
Instructions:

Season the oxtails with salt and pepper. In a large pot, heat the vegetable oil over medium-high heat and brown the oxtails on all sides, about 10 minutes. Set them aside once done.

In the same pot, add the chopped onion, minced garlic, and minced ginger. Cook until the onion is soft and translucent, about 5 minutes.

Return the browned oxtails to the pot. Add beef broth, grape juice, soy sauce, Worcestershire sauce, bay leaves, and thyme. Bring the mixture to a gentle boil.

Reduce the heat to a gentle simmer, cover the pot, and cook for 2 to 3 hours or until the oxtails are tender and falling off the bone.

Add the sliced carrots and celery during the last 30 minutes of cooking.

Remove the bay leaves before serving. Serve the oxtails with the vegetables and broth.
