Boston Cream Pie Cupcakes (Print Version)

Ingredients:

01 - 1 cup all-purpose flour.
02 - 1 teaspoon baking powder.
03 - 1/4 teaspoon salt.
04 - 1/2 cup unsalted butter, softened.
05 - 1/2 cup granulated sugar.
06 - 2 large eggs.
07 - 1 teaspoon vanilla extract.
08 - 1/2 cup milk.
09 - 1 cup milk.
10 - 3 egg yolks.
11 - 1/4 cup granulated sugar.
12 - 2 tablespoons cornstarch.
13 - 1 teaspoon vanilla extract.
14 - 1/2 cup heavy cream.
15 - 4 ounces semi-sweet chocolate, chopped.

Instructions:

01 - Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a separate bowl, beat the softened butter and sugar until light and fluffy. Add eggs one at a time, beating after each addition. Stir in vanilla extract. Gradually add the flour mixture to the butter mixture, alternating with milk, beginning and ending with the flour. Mix until just combined. Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
02 - In a medium saucepan, heat milk until it starts to simmer. In a separate bowl, whisk together egg yolks, sugar, and cornstarch. Slowly pour the hot milk into the yolk mixture while whisking constantly. Return the mixture to the saucepan and cook over medium heat until thickened. Remove from heat, stir in vanilla, and let cool.
03 - Using a knife, remove the center of each cooled cupcake to create space for the pastry cream. Fill each hole with the cooled cream filling.
04 - In a small saucepan, heat the heavy cream until it begins to simmer. Pour the hot cream over the chopped chocolate in a bowl, stirring until smooth. Let cool slightly.
05 - Dip each cupcake top into the ganache, allowing it to drip down the sides. Refrigerate the cupcakes for 15-20 minutes to set the ganache.
