Ingredients:

1 pound ground beef, browned & drained.

2 russet potatoes, peeled & diced.

1 cup carrots, shredded.

3 cups chicken broth.

16 oz Velveeta cheese, cubed.

8 oz cream cheese, cubed.

1/2 cup bacon, crumbled.
Instructions:

Place the peeled and diced russet potatoes at the bottom of the crockpot.

Cook the lean ground beef over medium heat until there's no pink left. Drain any excess fat and add it to the slow cooker.

Add the finely chopped onion, shredded carrots, and diced celery to the crockpot.

Evenly sprinkle Italian Seasoning, salt, pepper, and garlic over the vegetables.

Pour in 3 cups of chicken broth, ensuring it covers all ingredients in the crockpot.

Place the lid on the crockpot and set it to cook on low heat for 4-6 hours.

Cube the Velveeta cheese and cream cheese, then add to the slow cooker for the last 30 minutes of cooking until melted.

Stir the soup well to combine all ingredients, adjusting salt or pepper as needed.
