Ingredients:

01 - 1 pound ground beef, browned & drained.
02 - 2 russet potatoes, peeled & diced.
03 - 1 cup carrots, shredded.
04 - 1/2 cup celery, diced.
05 - 1 white onion, diced.
06 - 1 tbsp Italian Seasoning.
07 - 1 tbsp garlic, minced.
08 - 1 tsp salt.
09 - 1/2 tsp ground pepper.
10 - 3 cups chicken broth.
11 - 16 oz Velveeta cheese, cubed.
12 - 8 oz cream cheese, cubed.
13 - 1/2 cup bacon, crumbled.

Instructions:

01 - Place the peeled and diced russet potatoes at the bottom of the crockpot.
02 - Cook the lean ground beef over medium heat until there's no pink left. Drain any excess fat and add it to the slow cooker.
03 - Add the finely chopped onion, shredded carrots, and diced celery to the crockpot.
04 - Evenly sprinkle Italian Seasoning, salt, pepper, and garlic over the vegetables.
05 - Pour in 3 cups of chicken broth, ensuring it covers all ingredients in the crockpot.
06 - Place the lid on the crockpot and set it to cook on low heat for 4-6 hours.
07 - Cube the Velveeta cheese and cream cheese, then add to the slow cooker for the last 30 minutes of cooking until melted.
08 - Stir the soup well to combine all ingredients, adjusting salt or pepper as needed.
09 - Garnish with crumbled bacon, pickles, and extra diced onions if desired before serving.

Notes:

01 - For added flavor, garnish with chopped pickles and onions.
02 - Cook the ground beef thoroughly before adding it to the crockpot to avoid excess grease.
03 - Add the cheese towards the end of cooking for a smooth, creamy consistency.
