Beef Chimichangas (Print Version)

Ingredients:

01 - 6 large flour tortillas.
02 - 1 lb ground beef.
03 - 1 onion, finely chopped.
04 - 2 cloves garlic, minced.
05 - 1 teaspoon cumin.
06 - 1 teaspoon chili powder.
07 - 1/2 teaspoon salt.
08 - 1/2 teaspoon black pepper.
09 - 1 cup cheddar cheese, shredded.
10 - 1/2 cup Monterey Jack cheese, shredded.
11 - Vegetable oil, for frying.
12 - Salsa, sour cream, and guacamole, for serving.

Instructions:

01 - In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft. Drain any excess fat.
02 - Stir in cumin, chili powder, salt, and pepper, and cook for another 2 minutes.
03 - Remove from heat and let the mixture cool slightly. Then mix in the cheddar and Monterey Jack cheeses.
04 - Spoon about 1/6 of the beef and cheese mixture onto the center of each tortilla. Fold the sides of the tortilla in, then roll up from the bottom to enclose the filling completely.
05 - Heat a large amount of vegetable oil in a deep skillet over medium-high heat. Fry the chimichangas until golden brown on all sides, turning as needed. Drain on paper towels.
06 - Serve hot with salsa, sour cream, and guacamole on the side.
